Not gonna lie, the way I picture our fleet working is that we have a shit ton of Raveners and Hormagaunts and we bury ourselves underground. As soon as something comes over, the Adrenal glands kick in and we leap out, tearing our targets to shreds before retreating. However, we lack monstrous creatures. Furthermore, I feel like we are hunting down a Necron Overlord.

It's just that hive fleets usually get named after sea monsters/serpentine creatures, and while Osiris fits in a way that it's Egypt-themed and our rivals are ancient egypt spess robots, Apophis fits better because it's a snake creature from egyptian mythology.

It is not impossible, just unlikely. Nids avoid tomb worlds cause there isn't much biomass on it, but we could have gone to a fertile world, only to discover too late Necrons were under the surface.

So there's these endless corridors deep within the planet where gravity gets screwy all the way up to the barren surface where we fight with undead zombie Egyptian robots.

So, looks like we are going with Hive Fleet Apophis as a name, and for a backstory, we're trapped on a world with a necron tomb, neither of us able to make new forces as we destroyed their reanimation chambers while they destroyed our fleet, and thus, all our norn queens and spawning locations.
Anyone wanna try fluffing our Ultimate Stalker. I'm still enjoying the idea of us doing sneak attacks via burrowing, so I'm thinking we have a special Raverner

It's a race of destruction - to see who manages to kill the other first. For us, killing the Necron Overlord as quick as possible while preserving as much of our troops as possible, because then we can cripple our opposition and recycle our biomass to form new ships withut interruption.
For necrons it's, obviously, kill off all the alien roaches before they regroup, get into space again fuck up even more shit than they already did.

Oh, actually new idea for our Stalker: A Mawlock Prime, our only monsterous creature. It was an adaptation made out of desperation, as we lost our fleet and thus most of our leader beasts. It now leads sneak attacks, coming up under Triarch stalkers and pulling them under ground to be torn to shreds.

So, I think I'm gonna do an official fluff write up and then we can change things.
Hive Fleet Apophis was created by the Hive Mind for a bold and daring move: to force its way past a Necron Dynasty and get to the large amount of organic slaves it kept, prisoners from recent wars with the other species of the galaxy. Unfortunately, the Necrons proved to be too powerful, and the fleet's ships were all destroyed, its monsterous creatures cut down. The hive mind was forced to create Mawlock primes just to keep the army together. Trapped on a planet with no way off, things seemed dire for Apophis... that is, until the very Mawlock Prime made out of desperation led a raid that destroyed the Necron's reanimation chambers. Shocked by the loss, the Necron overlord ordered his forces to retreat back to the central tomb and take defensive stances. Now both armies are locked in a stalemate, the Tyranids unable to get into the tomb and the Necrons unable to get out without getting ambushed by the surprise adrenal gland fueled sneak attacks Apophis has become known for. Apophis maintains a number advantage as most of its lesser beasts such as gaunts and raverners were able to survive the initial war, while the Necrons maintain a firepower superiority, having cut down almost all of Apophis's monsterous creatures. Only time will tell which side emerges the victor. For now, both sides wait... wait for the chance to destroy their enemies once and for all.

As I said, Mawlocks fit more with a different option from the table (Subterranean Horror, 81-90), so let's change that.
Instead, we could have a breed of lictor primes that coordinate scattered packs of warriors and gaunts, organizing them into a sort of guerilla network that perfrom lightning hit and run attacks on necron troops that methodically scour the surface trying to stomp out the infestation with limited forces.

The slaves would probably come from two sources :
a) Previous inhabitants of the planet that were subjugated by necrons when they awoke.
b) Captures during raids.
In this case, we can have a schism in the slaves ranks, with those captured fighting to find some way to get off-world and natives fighting in a (futile and misguided) attempt to reclaim thir world or out of desperation, because the only other option they have is to lie down and allow themselves to be killed.
The conflict between the two groups would strive from the fact that they have very limited resources at their disposal that they would have to compete for.

I like the idea that full on engagements between Nids or Necrons are rare. Because they can't make more forces, they only engage when it is a guaranteed curbstomp. Like, a shit ton of Hormagaunts leaping out of the dirt to tear apart a bunch of Immortal before they know what hit them, or a Monolith teleporting into an area where it is known that none of the Nids few monsterous creatures are near.

This sounds cool, however I do not imagine this is capable of dragging out for too long:
- Necrons, while posessing superior firepower durability and abity to quickly respond due to teleportation technology, lack flexibility, true tactical acumen and, most importantly initiative in the conflict, and thus steadily succumb under tyranid raids.
- Tyranid remnants due to their flexibility and mobility slowly but surely overpower necrons, but due to the low overal amount of biomass on the planet and inabilty to neither restore their numbers nor inflicting serious damage to necrons without sustaining lossess inevitably starve out and dwindle.
- Slaves, despite their desperate struggle, remain minor factor in the conflict and don't even count as a singular "faction". All they do is get ground up between two forces.

I could see this conflict lasting around 100 years or so, the Necrons in a constant downward trend from the Tyranid raids, but they don't lose forces often as the Necron commander is overly cautious.
Here's an idea, let's fluff out our Necron dynasty rivals. After all, they don't even have a name yet. I do like the idea of the Overlord being a delusional coward, afraid of losing even the smallest of engagements, while also thinking he'll eventually win. I imagine he's super paranoid that he will be assassinated by a nid one day and unable to be reanimated, so he always has his entire Praetorean guard on hand and never leaves his tomb palace.

So, summary:
In Seccession Wars were forced to fight for unification
During War in Heaven fought alongside the Outsider
Nemesis - these pesky spess bugs
Mental damage - believe themselves to be flesh and blood, and thus mortal
Objective - convert other forms into necrons

This will need some creativity to put together - the last three choices really don't synergise. At all.
