The party gets an adorable mascot to feed scraps of meat and play with, and as it grows it takes more of an interest in following their "helping protect people from immediately dangerous monsters" thing, because the "alignment from birth" meme is dumb.
Though, it does take awhile until the locals trust the dragon to not do typical evil dragon things, and it leans that strangers will generally assume the worst on seeing a dragon.

The throat muscles are a delicacy as long as they havent matured into resistance to flame spewing.
The scales of a baby dragon are thin and can be deep fried into chips, just salt brine them first. Serve with leviathan caviar and creme fraiche.
There's not enough meat on the shanks of the young ones to merit the tendon hassle if eaten whole, i'd advice making confit and using the meat for a nice dryad salad.
The wings are sparse in meat, but unused and -very- tender. Try a barbecue marinade and make real HOT hotwings. Unfortunately you'll only have two unless you managed to get the whole cluth of eggs.
The liver is usually of poor quality, being freshly hatched, is usually small, lean and filled with toxic metabolites. I reccomend throwing out or if you must, detox extensively by repeated rinsing, drying and grinding into meal to spice pate. In all honesty it's suited more for spell reagents, those uncultured wand-wavers will buy anything as long as it's from a dragon, no eye for high quality ingredients.

But the apex of cooking young dragons is this; first you drown the entire baby dragon in a bath tub of high quality brandy, then you tie it up, deep fry it in aboleth lard, let drip, season and serve in a crust of finest flaky pastry (use halfling butter... What? Made by halflings! Not made from! Are you a psychopath or something?) - then the crux, consumption. You have to somehow shapeshift into a huge or larger being, ( i can reccomend a dire grizzly bear, very good sense of smell, surprisingly well developed sense of taste) and you eat the baby dragon whole, making sure to bite down hard on the chest cavity in order to experience the ecstacy of the crackling, popping ribs and the savory juice the organs expel, all rising to a climax of salt, savory hot fat, brandy and smoky dragon umami. Truly the apex of culinary decadence.
Make sure you give the one finger salute to any god who happens to be watching and (most likely) judging you.

Not really. Dragons are born very smart, in some cases due to ancestral memories, but otherwise you're dealing with a toddler minimum after a week. And it doesnt require a lot for an instinctively evil dragon deciding to screw your rules and leave. That's not how this works. There is no "Why" in this system. Any "Why" you'd find is a man made construct that exists only in the mind that holds it and nowhere else. Ex: Fairness/Balance don't exist. There is no physical law of Fair. Any possibly occurence of it is merely the construct occuring in a mind and the mind attempting to enforce it on the local enviroment to a poor degree but it never actually tangibly exists as it simply cannot. There is no "Reason" behind You/Them/Us existing and there never will be outside unique singular standalone instances in the mind of the beholder and nowhere else and even then it's not a fact but a pseudo-superimposed supposition. The closest you can get to an answer to your question is: "Because random chance occured."

The brain is very large for the dragon's size, i'd say serve a'la natural with crackers in order to not overpower the light buttery taste. Dont worry about any contamination, happily, freshly hatched dragons are completely sterile! This is due to the barrior of the amniotic egg membrane and the high heat the mother provides which is needed to mature the clutch. (and for this reason, allways store dragon eggs intended for hatching at -atleast- 300 C' - if someone sells you a cold dragon egg, they're ripping you off!)
Although, some people argue that since humans and dragons have the capacity to interbreed (yuck) the dragons cerebrospinal complex is similar enough in protein makeup to infect humans with something called Mad-dragon disease, according to them the so called "prions" are heat stable to upwards of 900 degrees and thus could lead to infection. At any rate the risk is low, and is life worth living if you cant savour the smooth buttery yet strangely piquant taste of fresh baby dragon brains?

As for the heart, stew or pie, in combination with something light, like angel brisket(Archons of the third choir of light are especially tender) or nymph couvette.

As for the genitals, that's tricky, personally i am of the school of thought that genitals, as a general rule, isn't a very attractive or worthwhile cut. They're (mostly) served for the novelty of it, for the purpose of heathen fertility rituals, because they're cheap "waste cuts" or simply to challenge the cook to produce fine food out of hard to cook ingredients.
That being said, since dragon penii are muscular (like all members of the Draconix Rex family i would most probably fillet the muscle, slice them thinly, season lightly with salt and pepper, drizzle a bit of treantberry oil infused with underdark pink mushroom oil and top with nice paperthin flakes of dwarven rock-crystal coalcheese and maybe some nice crisp stranglefrond salad leaves as well.

I've always wanted to play as a beastmaster ranger whose companion is a baby dragon, on a quest for a means of magical aging so he may actually get to ride the dragon someday.
The baby dragon would be functionally identical to a default beast companion at low levels, not even able to fly, but I would persuade the DM to let me upgrade it with expensive rituals. It can't be unbalanced, because beastmaster rangers are the weakest rangers in every edition, and there are already level-appropriate magic items in the game that have the same effects.

Just because RAW beastmaster rangers are weak doesn’t mean that giving them a fucking adult dragon (due to ageing spells/rituals) isn’t unbalanced as hell.

That being said, what you have isn’t a necessarily bad idea, but you need to accept that the dragon even if it starts young is very unlikely to just be some dumb beast and you’ll need to work hard to establish and maintain a relationship through strong role play.
