You could have a point crawl diagram for a top level map. The connecting lines would be stuff like bridges, enclosed galleries, etc. Rather than being mapped they could just be a brief description

Each point is an area with recurring floorplans (ie, every "great tower" has a similar layout)

A few unique areas could be mapped in detail (ie, a single Grand Hall the size of an jumbo jet hangar)

It wouldn't be that important to map most areas in detail, unless you really want the game to be an infinite dungeon crawl

The first two harry potter books actually did this, with the moving staircases, boss rush corridor and underground dungeon below the bathroom. But then the castle became rather small and incredibly dull in later books/movies.

The early video games though, those did it fantastically. The castle in those games is almost surreal.

A Red & Pleasant Land is a setting book that is a cross between Alice in Wonderland and Dracula. It takes place in the ruins of an enormous castle alongside its outlying gardens that fell apart as the vampires living within split into four different factions along the lines of card suites. It has a specific set of "rules" that the denizens operate by in that the entire place is criss-crossed into a chessboard shape by rivers while the vampires can't cross running water. At the same time there are guidelines for dueling , croquet games and courtly manners and the like. It has a lot of random tables and rules for generating parlors, castle wings, gardens, including a few examples that can be used as adventures on their own.

Lamentations of the Flame Princess is a D&D Basic clone. You don't need to use the system if you want as the book itself says that it can be used for any version of D&D. BFRPG is my preferred retroclone, though I'm going to see about porting the thing to GURPS. If you want a physical copy of AR&PL you should get it fast as the author got metoo'd and his books have been discontinued as a result.

Three dimensional/multilevel space is notoriously difficult to do in PnP.

It's not hard to keep straight who has the high ground and who has the low (ie, surface boats fighting submarines, archers on a balcony shooting down, ambushing a group in a mountain pass, etc. Three levels of elevation starts to get annoying. Full z axis positioning is a headache that can bog things down even if you have a system to keep it all straight--you'd have to go over to 3D wargame terrain at some point.

It's not very tied to the system. It's actually on the looser end describing how to use it regardless of how your system handles certain things. You will need to largely stat the monsters fresh and figure out what you will do with the currency but it's otherwise a setting book with good attention payed to both intrigue and exploration.

I would leave out the MC Escher dungeons and chess puzzles to start, but you can run it in a fairly normal manner if you want. Look at the sample forest crawl and have let's say a Red Bishop hire the PCs to retrieve the shoes. Slowly unravel the absurd politicking and customs to ease them into the general weirdness of it.

I thought about taking this concept but instead of a small group of people getting lost in there for who knows how many years, so many groups find each other in there they start a town or maybe a civilization inside this bigger on the inside castle/labyrinth. A lot of their environments have a large central feature that you operate around as you explore (the main hall in anor londo is a good example, you dip in and out of it several times whilst exploring). Nah, I think it's probably got more to do with the books being not easily classified and maybe a bit too strange for some people in that case. It's not a typical adventure story. The first two books deal a lot with subjects like breaking away from tradition, the second book ending with Titus, after having defeated Steerpike, realizing that being the Count of Gormenghast effectively meaning to become a slave, so he flees. In the third book, however, it turns out that life outside the castle isn't any better. There Titus is nothing but a lunatic claiming to be from a castle that no one has ever heard of, and their traditions and customs are completely alien to him.
